Easy, Vegan-Friendly, Dark Chocolate Fudge
Fudge is one of my all time favorite sweets. It's rich, comes in various flavors, creamy and undeniably delicious. I mean, what's not to love? Since I became vegan, I haven't eaten nearly as many sweets as I did before, which is a great thing, but sometimes I still have an occasional chocolate craving. I've never been one who's keen on baking, but while scouring Pinterest for a vegan-friendly dessert recipes, I hit a gold mine. I happened upon the recipe for "Dark Chocolate Coconut Fudge" from a lifestyle blog called Wholefully and recreated it for all of you. Ingredients:
- 1/2 cup coconut oil (melted)
- 1/4 cup maple syrup
- 1/2 cup cocoa powder
- 1/4 teaspoon vanilla extract
- Pinch of salt
- Measure all ingredients and combine in bowl
- Whisk until smooth
- Pour mixture into small, parchment-lined pan (I recommend a very small container as the one I used ended up being much too large)
- Refrigerate for 1 hour
- Cut and serve!
My thoughts on the final product are it's delicious! I wouldn't recommend leaving it sit out for too long though as it melts easily. Freezing it might be the better route to go. I hope you found this recipe as useful as I did and as always ...
